  • Mix well together.
  • There should be no lumps.
  • Bake in a waffle iron, or like regular pancakes.
  • Variation: add 1/2 cup finely chopped apple and 1/2 teaspoon cinnamon.

  1. I used skim milk rather than the water, ground the oats after measuring, used whole wheat flour and olive oil. Very good smothered in apple sauce!
     
  2. Man, I thought these were delicious! I followed the recipe exactly (no apples). I tried three toppings: Strawberry jam w/sprinkle of confectioner's sugar(best), smothered in apple sauce (yummy!), and maple-flavored syrup (not so hot).
     
  3. Oh my goodness these are amazing!!! I hate the texture of oatmeal but I keep looking for ways to eat more of its healthy goodness. These are filling and delicious! I added a bit more water than it called for and let the batter soak for a few minutes before dropping the batter on the griddle. This softens the oats a bit before cooking and gives them a great texture.
     
  4. I loved this recipe!! I always thought you needed milk, not water, for waffles-but it worked out fine! I cut the recipe by a quarter & used 1/2 cup rolled oats (that made one big waffle-perfect for a one person meal), sugar free syrup for the molasses, applesauce for the oil, no salt & added 1 tsp cinnamon & 1/4 tsp vanilla. I also only used 1/2 tsp baking powder-which worked fine. I used my immersion blender to make it as smooth as possible-it's probably not as great as a food processor but it does the job well enough for me! I love this smeared with natural peanut butter, sliced bananas & sugar free syrup. Delicious!!
     
  5. Wildheart! These are lovely, VERY hearty pancakes. I often shirk from traditional pancake recipes, as I have to eat quite a few to fill up. These are like a hot bowl of oatmeal, in disguise of a pancake - awesome! I'm going to add some spices, like ginger and cinnamon and see how they turn out. I'll be passing this recipe along to my diabetic mom. Thanks!

  1. DELICIOUS! I made these in the blender, first grinding the oatmeal, adding the remaining dry ingredients (including cinnamon) and then the wet (used almond milk instead of water) with about half of a large Granny Smith apple. I served these with some thinly sliced microwaved apples and cinnamon syrup. SO yummy!
     
  2. I made these with old fashioned oats and whole wheat flour. I also used apple sauce in place of the oil and added pecans and 1/2 tsp cinnamon. In the end the batter was very thick, so I added about another 1/3 c water. These were very good and filling.
     
  3. Loved the pancakes! My only complaint was that they started to fall apart once syrup was on them... But they were still delicious, and I plan on trying them again, repeatedly, with different toppings/syrups. The kiddos loved them too, and asked me to make more so we could freeze them for later. That makes them a major thumbs up!<br/>Oops, forgot to mention, I added a whole Granny Smith apple, peeled and cubed, and cinnamon. Also substituted honey for the molasses.
     
  4. I was hoping for better with these but that's ok, they were worth trying. I modified it quite a bit though- I only use rolled oats, so I put all the dry stuff in the food processor, used milk instead of water, and canola oil instead of corn. Not bad.

Still in West Virginia but we've moved a few miles away, down to the county capitol. It's a compromise: bigger than our last town but smalelr than the "big city" of Cumberland MD, right up the road. Jobs are not that plentiful here so I am fortunate to be able to work at home (I'm a writer). My passion is cooking and feeding people family well....my pet peeve is the family court systems in America......my love is for emergency medicine and the people that make survival in a crisis possible
