Oatmeal Crispies

"This oatmeal crispy cookie recipe, was my mothers. I don't know where she got it from, but they are ever so tasty with a big glass of milk to dunk them into. They are simple to make and my mother used to make multiple batches and freeze the dough in the form of a oblong log. When she would take them out of the freeze and thawed for awhile, they were easy to cut. This recipe makes four dozen cookies."

• Serves: 48

ingredients

• 1 cup shortening
• 1 cup brown sugar
• 1 cup white sugar
• 2 eggs
• 1 teaspoon vanilla
• 1 1⁄2 cups all-purpose flour
• 1 teaspoon salt
• 1 teaspoon baking soda
• 3 cups quick oats
• 1⁄2 cup nutmeats

directions

1. Mix the dry ingredients together first,.
2. then add your eggs, vanilla and shorting.
3. After all ingredients are mixed, form into an oblong log.
4. Wrap your log in wax paper and place into the freezer for about two hours.
5. Remove and slice your cookies and place them on a cookie sheet, that has been sprayed with Pam or some other spray.
6. Place in a 350 degree oven for 10-12 minutes.
7. Let cool and enjoy.
