  • Preheat oven to 325F and grease a tube pan.
  • Cream butter, margarine, and (both) sugar until light and fluffy.
  • Add egss one at a time, beating well after each addition.
  • Sift flour and baking powder into the batter alternately with the milk and vanilla extract.
  • Fold in the chopped nuts.
  • Bake for 1 1/2 hours.

  1. EXCELLENT!!! I made this as part of "Pick Your Chef" contest here on Zaar. I halved this recipe. I used 1 1/2 cups of all-purpose flour(which I believe, is the same as plain flour), 1 cup margarine(I omitted butter altogether as we like and prefer margarine to butter), 1 cup light brown sugar, 1/2 cup white sugar, 2 eggs(beaten), 1/2 cup milk(low-fat), 1 tsp. baking powder, 1/2 tsp. vanilla essence and a combo of 1/2 cup cashewnuts(broken) and 1/2 cup walnuts(chopped) as I didn't have pecans on hand, but had excess of walnuts and cashews. This cake took exactly 1 hour to bake in my AMC Dutch Oven. My house smelt like a bakery when I opened the lid of the oven after an hour was up! I'll be serving this this evening to friends' as part of India's Republic Day celebrations here at my home. This is an excellent cake and I really loved a bite I took as soon as this was out of the oven(I tasted the nutty part with a bit of cake surrounding it). Wonderful! I'm so glad I picked you, Ko-Ko girl for this contest. I'm so glad you joined Zaar and I will keep an eye out for more recipes from you. So far, everything I've tried out of yours, is EXCELLENT! Congratulations! UPDATE: I gave a huge slice of this cake to the Executive Chef of Ramada Hotel, Dubai who happens to be a friend of my dad's and who visited us 2 days back. He loved this cake and made me smile as much as my jaws would stretch when he said its extremely well baked and really good. He also said that he is cutting down on sweets, but would like me to pack another slice for him to take back home and share with his family:) THANK YOU THANK YOU THANK YOU for such a fanta-fabulous wonderful yummy tasty divine excellent addictive cake!

I'm a 19 year-old crazy for all foods! Although I love to pig-out, I only do that occasionally now coz I'm also quite conscious about my weight! Unlike many others my age, apart from just eating, I also like to cook. I'm still a novice in many things but learning to cook or bake is one of the things I enjoy the most.
