Nachos for Dinner?

"When you need a quick dinner that will please all. I usually make this on those days that we had a big lunch and just need to put a little something in out bellys."

  • Cook beef and taco seasoning in skillet until browned. Pour off fat.
  • Add soup, water and rice. Heat to a boil. Cover and cook over low heat 5 minute or until done.
  • Top with salsa, cheese and lettuce. Serve with tortilla chips for dipping.
  • Note: I have also used this for a tortilla filling, but then you can't say you had nachos for dinner.

  2. Fast and easy! Made this on a busy weeknight- night before Christmas Eve- and was so glad to have something this fast! Everyone could fix their own 'nachos' using as little or as much of each ingredient they wanted. I only made one change which was to use ground turkey rather than beef. I am the mother of two beautiful boys. I love to bake and cook which has helped me to become very overweight. I have lost 50 pounds this past year and have been learning to cook "lighter".
