ingredients
- 1⁄3 cup coconut oil (melted)
- 1⁄3 cup honey
- 1 1⁄2 cups soymilk (vanilla or plain)
- 1⁄2 cup applesauce
- 2 eggs
- 2 scoops collagen, powder (optional)
- 1 teaspoon vanilla
- 2 3⁄4 cups rolled oats
- 1⁄2 cup flax seed (ground)
- 2 scoops protein powder (I use Sunwarrior vanilla rice protein)
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 2 teaspoons cinnamon
- 2 apples (peeled and chopped)
- 1⁄4 cup dried fruit (I like blueberries)
directions
- Preheat oven to 350.
- Mix everything together.
- Spoon into 12 muffin cups.
- Bake for 25-27 minutes.
