Mushroom Curry

"An easy side dish to serve hot or cold. I prefer these cold even when served with a hot meal. A great do ahead dish."

  • Heat oil at medium-high and fry onions until brown, about 6 minutes.
  • Reduce heat to medium and add next 5 ingredients.
  • Fry for 1/2 minute.
  • Add mushrooms and stir 6 minutes or until cooked.
  • Add lemon juice.
  • May be served hot or cold.

  1. Have made this twice now, both times with favorable response from the family. I didn't make any changes (for once!) The second time, I served it with cheese tortellini, and sprinkled a little Parmesan on top.
     
  2. This is a good basic recipe which requires a bit of oomph to give it that 5 star rating. Next time (there WILL be a next time), I will add chopped cilantro and increase the cayenne a bit. I'm not sure if it requires any other additions, but I will definitely experiment with this great basic recipe, which others may easily find to be a 5 star rating. This really CAN be served both cold or hot, depending on preference, and would go great with a chicken and rice dish. Thanks for posting!
