  • 1 12 cups dried Italian breadcrumbs
  • 1 13 cups freshly grated parmesan cheese
  • 1 teaspoon salt
  • 2 (16 ounce) packages pasteurized mozzarella cheese, cut into 4 by 1/2-inch sticks
  • 4 large eggs, beaten to blend
  • 1 12 cups vegetable oil

  • Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend.
  • Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely.
  • Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
  • Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with marinara sauce.

  1. My review is for the actual mozzarella sticks as I used my own sauce. We enjoyed these and they were easy to put together. I used the mozzarella cheese sticks you can buy in a package (I halved them) and it worked well. I felt they had to cook a little too long because of being frozen so I might try refrigerating them next time and see how that works. Thanks for posting!
     
  2. I made these a while ago after watching Giada's episode on TV. They are absolutely to die for...not for those on a diet, because you can't eat just one! Served with homemade marinara sauce, but I'msure that pizza or spaghetti sauce would work just as well. Don't change anything about the recipe...it's perfect on its own! Enjoy!

I've since moved to the east coast to a small village in Northern Virginia - a huge change! We moved here mainly so we could live in an area better suited to raising children and closer to family. Although it's an adjustment, we really love it here. My husband and I were married in Feb 2003 and had our first daughter, Kylie, in Aug 2004. Our second daughter, Katie, was just born in July 2006. I was an HR Director until I became Mom, and I wouldn't trade this job for anything in the world! I began cooking when I became a stay-at-home-mom, mostly out of necessity. We used to eat out for every meal...and I do mean EVERY meal. When our income was cut in half after my "early retirement", eating out was no longer an option. Therefore, if I was going to continue to eat all the delicious food I was accustomed to, I was going to have to...oh, the horror!!!...COOK IT MYSELF!!! I had grown up baking with my mom, but hadn't actually baked in years and had always left the cooking to her. To my utter surprise and delight (not to mention my husband's SHOCK and delight)...I loved it!
