- 3 oranges, peeled and sliced crosswise
- 1⁄2 cantaloupe, thinly sliced
- 2 cups carrots, shredded
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1⁄2 lemon, juice of
- 2 teaspoons Dijon mustard
- 2 tablespoons chopped of fresh mint
directions
- Divide oranges, cantaloupe and carrots and among 6 salad plates.
- In a small bowl, whisk together oil, vinegar, lemon juice, mustard and mint.
- Drizzle over salads.

This was really good and simple to make. I made this for 20 people as a side dish to Recipe #428649 for my daughter's birthday and could have easily doubled it with as fast as it disappeared.
