Minted Apricot Fish

"This recipe comes from "The Best Seafood Recipes" by The Australian Womens Weekly. This is a very easy recipe and the result is quite delicious. I used ling fillets and they recommend Ocean Perch Fillets."

  • 6 large white fish fillets
  • 425 g apricot nectar
  • 30 g French onion soup
  • 1 tablespoon lemon juice
  • 2 tablespoons of fresh mint, chopped

directions

  • Place fish in baking dish in single layer.
  • Combine remaining ingredients and pour over fish.
  • Cover and bake in moderate oven for about 45 minutes until fish is tender.
  • You can uncover for last few minutes to get a caramelized finish.
