Mini Reubens

"A quick and easy appitizer. Always a crowd pleaser! I don't personally care for Reuben sandwiches and I can't get enough of these little things!"

  • Dice corned beef.
  • Mix shredded cheese with beef.
  • Drain sauerkraut well.
  • Dice and add to cheese/beef mixture.
  • Add enough mayo to moisten the cheese mixture.
  • Add horseradish.
  • Spread a think layer of mustard on each slice of party rye bread (only on one side of the bread).
  • Add a layer of the cheese corned beef mixture.
  • Place mini-reubens on a cookie sheet.
  • Put under the broiler for 3-4 minutes or until hot and bubbly and cheese is melted.

  3. Excellent. I had no party rye rounds, but I did have Jewish rye bread & imagination on hand. I toasted, then quartered the bread slices, then spread mustard on one side of the toast. The remainder of the recipe, I followed precisely. My husband enjoyed this even more than the really righteous Reubens I make... Thanks for posting!
     
  4. Oh, my goodness! These little babies are outstanding! We were eating the mix raw from the bowl! I just realized I forgot the horseradish, but we didn't miss it a bit. We used dijon mustard and had these for St Patty's Day, since I'm not a huge fan of corned beef & cabbage :) We ate until we were sick...these are a breeze to make and totally addictive. This may well become my favorite appetizer. Thanks for sharing this one, it's a keeper!!

<p>Mom of four -- a&nbsp;13 year old daughter who is&nbsp;starting Eighth Grade, and a&nbsp;11 year old son who is going into Sixth Grade.&nbsp;Our youngest daughter will be six and is starting&nbsp;Kindergarten this year and my youngest son is 3 and starting three year old preschool. &nbsp;The kids are not only busy in school but we've also got Basketball, Cross Country, Softball and Football practices to contend with and dance lessons for the little one! &nbsp;My husband and I have been married&nbsp;almost 14&nbsp;years! I have loved to cook ever since I was a little girl, and have fond memories of helping my Mom and Grandma while growing up. I love to read cookbooks and cooking magazines as well as cooking supply catalogs (all those neat gadgets!).</p>
