"Like Minestrone soup, but in a pasta form. Can be multiplied to serve large groups. Does not need to be hot so can be made up ahead of time for large parties."

  • Cook and drain pasta as directed on passage.
  • Toss pasta and remaining ingredients.

  1. I REALLY like this. I used quinoa pasta (gluten-intolerant) and 1/2 orange and 1/2 green bell peppers. I like that this dish is low fat, has protein from the beans, has a good amount of fiber, and is so easy to put together. I did add a bit of chopped onion to it as well. Great flavors, a lot going on, and I think the flavors will just get better as the ingredients meld together. I used Newman's Own Light Italian Dressing. This is great for diabetics too. Thanks for posting this sweet recipe ~ made for Spring PAC 2010!

I remember cooking chocolate chip cookies alongside my mother when I was a child. Ironically, making cookies is now one of the things I'm worst at. I do loving baking everything else (cakes, muffins, breads, etc.). I like to try everything from scratch at least once. Probably the most outrageous thing I've made is gnocci. My family background is Hungarian and my mother jokes that the first word any Hungarian says is "Eat." I cook like any good Hunkie and my family never goes hungry. My family and I went to Hungary last year to visit the "Motherland" and even were able to find a great-aunt - who immediately brought out all kinds of homemade food and drinks. It helped me understand where I got my compulsion to cook....
