Mediterranean Tomato Pasta

"I got this recipe from a vegetarian cookbook, tried it and realised how light and tasty it was! Very easy to make and ingredients can be modified to your personal taste; I always add more tomatoes but also black olives cut in quarters would taste great!"

  • Cook the pasta with some salt and olive oil.
  • Quarter Tomatoes and cheese into small cubes.
  • Mix olive oil, vinegar, grated lemon, 1 tbsp of lemon juice, and the shredded basil leaves.
  • Add to the above salt, pepper, and the tomatoes and cheese.
  • Drain the pasta well, and pour over the above mixture. Mix well and garnish with basil leaves.
  • You can add Mediterranean black olives to the plate, It will only make the taste even better!
