- 2 1⁄4 cups dry penne pasta
- 450 g plum tomatoes
- 275 g mozzarella cheese
- 4 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- grated lemon rind
- 1 tablespoon lemon juice
- 15 fresh basil leaves, shredded
- salt & freshly ground black pepper
- fresh basil leaf, to garnish
directions
- Cook the pasta with some salt and olive oil.
- Quarter Tomatoes and cheese into small cubes.
- Mix olive oil, vinegar, grated lemon, 1 tbsp of lemon juice, and the shredded basil leaves.
- Add to the above salt, pepper, and the tomatoes and cheese.
- Drain the pasta well, and pour over the above mixture. Mix well and garnish with basil leaves.
- You can add Mediterranean black olives to the plate, It will only make the taste even better!
