Meatloaf With Sun-Dried Tomatoes

- 1 1⁄2 tablespoons olive oil
- 1 large onion, chopped
- 3 celery ribs, chopped
- 1 1⁄2 1 1/2 lbs ground chicken or 1 1/2 lbs ground beef
- 1 1⁄2 cups fresh breadcrumbs
- 2⁄3 cup chopped drained sun-dried tomato packed in oil
- 1⁄2 cup milk
- 2 eggs
- 2 teaspoons dried rubbed sage
- 2 teaspoons dried oregano
- 2 teaspoons salt
- 2 teaspoons ground pepper
- ketchup
directions
- Preheat oven to 375 degrees F.
- Grease a loaf pan, preferably glass.
- Heat oil in skillet over medium heat.
- Add onion and saute for 5 minutes; add celery and continue cooking until veggies are very tender, about 15 minutes longer.
- Transfer to large bowl.
- Add all remiaining ingredients except ketchup to vegetables in bowl.
- Mix thoroughly.
- Transfer to prepared pan and press mixture down well, smoothing the top.
- Bake for 1 hour.
- Spread ketchup on taop and bake about 15 minutes longer.
- Let sit for 5 minutes.
- slice and serve.

My Families new favorite meatloaf!!!I did change a few things. I used one pound of lean ground beef and added Italian breadcrumbs instead of fresh. I omitted the sage and oregano. I used the vegetables in amounts called for. The results, a perfect meatloaf that will replace my old. Thanks so much!!!

We went away for the weekend and I made this to take to my hosts. I left the milk out altogether, and substituted some oniony/garlicky cracker crumbs instead of the breadcrumbs. The sun-dried tomatoes give it a great kick in flavor. I cut back on the sage, added more oregano, and we were a very happy bunch for lunch!

Yum! I really wanted to give this 5 stars, because I really loved this meatloaf and so did my 17 month old. Then again, I loooooove sun dried tomatoes. Dh thought the meatloaf was just "okay" because he didn't like the tanginess from the sundried tomatoes. My 5 yr old took one bite and refused to eat it, but she is my super duper picky eater so I kind of expected that. I thought the texture was really great, especially considering how lean this is from the ground turkey. I realized a little too late I was out of onions so I used green onions and also added some chopped garlic. The sage was a tad bit too prominent so I may cut that by 1/2 a teaspoon or so, but other than that I have to say this was really tasty. Thanks for posting the recipe!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges. As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic. <img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried. But the good news is that I can control my glucose levels simply by eating very low carb. What a complete turn around it was to pass up all my high carb vegetarian foods like grains, and veggies and embrace meat! <img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p>
<p> The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain. I thank God that I am so much better today after more than two years recovery, with total mobility and just some minor pain in my arms and hands. Cooking and communicating here was not really on my priority list. But, I am back in action and ready to cook, take photos, and enjoy this wonderful community of friends.<img title=Laughing src=../tiny_mce/plugins/emotions/img/smiley-laughing.gif border=0 alt=Laughing /></p>
