- 1⁄2 green pepper, finely chopped
- 1 onion, small, finely chopped
- 1 garlic clove, minced
- 1⁄8 teaspoon thyme, ground
- 1⁄8 teaspoon sage, ground
- 1 teaspoon Worcestershire sauce
- 1 teaspoon red wine (or sherry)
- 2 -3 ounces sharp cheddar cheese, grated
- 1⁄2 lb ground beef (or meatloaf mix)
- 1⁄2 lb breakfast sausage, the kind that comes in a roll (like Jimmy Dean)
- 1 egg
directions
- Saute onion and green pepper until almost soft; add garlic and saute for another 1-2 minutes; remove from heat and set aside.
- Combine meats and set aside.
- Beat the egg; add the spices, Worcestershire, and wine. Beat together.
- Add the onion mix to the egg mixture, stir together, and add to the meat. Incorporate well.
- Fold the cheese into the meat mixture.
- Place in greased 3-1/2 x 6 loaf pan and bake at 375° for 35-45 minutes.
