- 1 1⁄2 lbs 93% lean ground turkey
- 1 egg
- 1 stalk celery
- 1⁄3 cup carrot
- 1⁄3 cup green onion
- 1⁄2 cup ground rolled oats
- 1⁄4 cup parmesan cheese
- 1 teaspoon cumin
- salt and pepper
- 4 tablespoons tomato paste
- 1⁄3 cup white vinegar
- 1 teaspoon Worcestershire sauce
- 1 pinch stevia
- 1 pinch salt
directions
- Preheat the oven to 375 degrees and spray the 6 cup muffin tin.
- Ground the rolled oats in a food processor or blender until you have made oat flour.
- Dice your celery, carrots, and green onions.
- In a large bowl, combine the ground turkey, egg, vegetables, parmesan, cumin, and salt & pepper to taste.
- Equally separate the meatloaf mixture into the muffin tins.
- In a small bow, combine the tomato paste, vinegar, worcestershire sauce, stevia, and salt.
- Spread the tomato paste topping onto each mini meatloaf.
- Bake the meatloaves for 40 minutes in the oven. Serve with a vegetable and/or mashed potatoes!
