Mango Glazed Fresh Atlantic Salmon

  • To make glaze - place vinegar and honey in a medium saucepan and over a medium heat cook until honey has dissolved and liquid has thicken slightly, about 2 minutes
  • Add ginger and mango and bring to low simmer and continue cooking another 5 to 7 minutes or until softened.
  • Remove from the heat and transfer contents to saucepan to a blender and process until a smooth puree forms and set aside to cool.
  • Once cooled, season with lime juice and soy sauce and fold in coriander (NOTE - glaze can be made 1 day in advance and extra glaze will keep up to 3 days in the refrigerator).
  • Preheat grill/broiler to high and line a medium baking tray with foil.
  • In a large saute pan heat olive oil over high heat.
  • Season salmon with salt and pepper and place in pan, glesh side down and cook until golden brown about 15 seconds and flip over and sear other side for another 10 seconds.
  • Immediately transfer salmon, flesh side up, to baking tray lined with oil and coat with mange glaze.
  • Place tray under grill/broiler and cook approximately 5 minutes, or until salmon is just done and glaze starts to brown and then transfer salmon to a plate and let rest for 2 minutes.
  • To serve, transfer fish to a platter and serve with sides.

  1. This is the best tasting salmon!! This was my first attempt at making salmon (don't make a lot of seafood at home, no one else eats it), I usually eat it when we go out, and this was better than a lot that I have had! The mango I got was not fully ripened so I added a little extra honey for the sweetness. The mango glaze made it so flavorful and the little bit of browning/crusting on top was perfect! This is going into my Best of cookbook and will be made again!! Made for AUS/NZ Recipe Swap #60.
     
  2. This is a definite five star recipe and one that we will be enjoying often this summer... The flavour of the glaze is outstanding and smells wonderful whilst cooking.. The only change I made was to add an extra tablespoon of honey as I found it to be little to vinegary with just the one. I also added a little more of both the ginger and coriander.. The ginger was only because after I had chopped it up I realised it was more than 1 tablespoon and the coriander is that I needed to use up what I had left.. Both ingredients were not upped by much.. I made the glaze in the morning and just put it in the fridge so it made for a very quick and easy dinner to throw together when I got in.. I served ours over a couscous salad for totally delicious dinner.. This was a big hit for us Pat thanks for sharing and can recommend it greatly.. A truly delicious way to serve salmon..

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
