Mamaw's Banana Bread

1 2lb loaf
ingredients
- 1⁄2 cup all-purpose flour
- 3⁄4 cup oil
- 3⁄4 teaspoon baking soda
- 3 tablespoons buttermilk
- 1⁄4 teaspoon salt
- 3 large bananas, mashed (about 1 cup)
- 1 cup white sugar
- 1⁄2 cup chopped pecans
- 2 eggs, lightly beaten
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
directions
- Preheat oven to 325°F.
- Grease and flour an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan; set aside.
- Sift together flour, soda, baking powder, cinnamon and salt.
- Add sugar, oil and buttermilk; stir to blend.
- Fold in bananas and nuts.
- Pour into prepared dish.
- Bake 1 hour 10 minutes.
- Makes one 2-lb loaf.
- *I also add a powdered sugar glaze over the top to make a prettier presentation.
- Just a tad bit of water, maybe 2 TBSP, mixed with about 3/4 cup of powdered sugar.
