ingredients
- 4 ripe bananas (medium to large)
- 3⁄4 cup whole wheat flour
- 3⁄4 cup flour
- 1 cup rolled oats (I use Trader Joe's)
- 3⁄4 cup sugar
- 4 ounces unsweetened applesauce
- 1 teaspoon real vanilla extract
- 1 teaspoon baking soda
- 1 1⁄4 teaspoons baking powder
- 1 egg
directions
- Mash bananas in bowl.
- Add other ingredients and mix well.
- Pour into large sprayed loaf pan, or muffin tins if you wish.
- Bake at 350 degrees for 1 hour 5 minutes or until wooden skewer comes out clean.

These are very moist for being low-fat. I made the muffin option, and made 6 of them as written and 6 with added cinnamon and mace. I baked them about 18 minutes. I preferred the flavor of the ones with the added spices. I liked the addition of oatmeal in these. Gave them some texture. I also used half sugar and half Splenda. Thanks for a good basic recipe that can be adapted to personal tastes. Made for Fall 2008 PAC.
