Low Carb Chicken Broccoli Alfredo Casserole

- 1 (1 3/8 lb) bag tyson grilled and ready oven roasted diced chicken breasts
- frozen broccoli, frozen, 32 oz bag
- 32 ounces heavy whipping cream
- parmesan cheese, shredded, 5 ounces
- 4 tablespoons butter
- cream cheese, 8 oz
- 2 tablespoons minced garlic
- 1 tablespoon instant chicken bouillon
- 2 teaspoons black pepper
- 1⁄2 cup mozzarella cheese
- 1 cup mozzarella cheese
directions
- Microwave broccoli and chicken until defrosted and drain well.
- In a large pot melt butter and sautee garlic for a few minutes on medium low heat.
- Dice the cream cheese and add to pot. Melt thoroughly.
- Add the heavy whipping cream and raise heat to medium. Ensure cream cheese is mixed well.
- Add in the chicken bouillon and pepper.
- Add parmesan cheese and 1/2 cup of mozzarella cheese, stir until melted.
- Stir in the chicken and broccoli until well coated. Continue to cook until it thickens slightly.
- Pour into a 13x9 casserole baking dish.
- Top with the 1 cup of mozzerella cheese and broil on high in oven. Broil until cheese turns golden brown to give it a nice crunch.
- Remove from oven and let it sit for 15 min before eating.
