ingredients
- 1 (15 1/2 ounce) can black beans, drained and rinsed well
- 3⁄4 cup Egg Beaters egg substitute
- 3 tablespoons nonfat plain yogurt
- 1⁄4 cup Agave
- 1⁄2 cup granulated sugar
- 1⁄2 cup cocoa powder
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon baking powder
- 1⁄2 cup all-purpose white flour
- 1 pinch salt
- 1⁄2 cup semi-sweet chocolate chips
- 1⁄4 cup semi-sweet chocolate chips
directions
- Preheat the oven to 350°F Spray an 8 X 8-inch baking pan with nonstick cooking spray and set aside.
- Place the black beans food processor (Magic Bullet was all I had, but it was sufficient); process until smooth and creamy. Add 1/2 Celsius chocolate chips and grate them a bit.
- In a mixing bowl, add eggs, yogurt, agave, sugar, cocoa powder, vanilla extract, cinnamon, baking powder, flour, and salt and mix. Add in black bean and chocolate chip puree and mix well.
- Pour the batter into the prepared baking dish and sprinkle the top with the remaining ¼ cup chocolate chips.
- Bake 25 to 30 minutes, or until the edges start to pull away from the sides and a toothpick inserted in the center comes out clean. Cool in the pan before slicing.
