Love in a Black Bean Brownie

"Adapted from http://mealmakeovermoms.com/kitchen/2009/07/10/black-bean-brownies/, but changed a bit. Black bean taste is there, but pretty much masked. Used yogurt to replace oil, and agave to replace sugar (should be 3/4 c. sugar in all, but i ran out of agave...) I'm usually only a fan of the batter, but I actually like the finished product too!"

  • Preheat the oven to 350°F Spray an 8 X 8-inch baking pan with nonstick cooking spray and set aside.
  • Place the black beans food processor (Magic Bullet was all I had, but it was sufficient); process until smooth and creamy. Add 1/2 Celsius chocolate chips and grate them a bit.
  • In a mixing bowl, add eggs, yogurt, agave, sugar, cocoa powder, vanilla extract, cinnamon, baking powder, flour, and salt and mix. Add in black bean and chocolate chip puree and mix well.
  • Pour the batter into the prepared baking dish and sprinkle the top with the remaining ¼ cup chocolate chips.
  • Bake 25 to 30 minutes, or until the edges start to pull away from the sides and a toothpick inserted in the center comes out clean. Cool in the pan before slicing.
