ingredients
- 4 cups white bread cubes
- 2 cups nonfat milk
- 1⁄2 cup egg substitute
- 3⁄4 cup sugar
- 2 tablespoons applesauce
- 1⁄2 cup raisins
- 2 tablespoons vanilla
- 1 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- 1⁄8 teaspoon salt
directions
- Preheat over to 325.
- Put bread cubes in greased 9x9 pan.
- Combine all other ingredients and pour mixture over bread.
- Bake uncovered for 60-75 minutes.

Good bread pudding! Even good with the yeast peach/blueberry bread that wasn't too tasty... : ) Especially good with a vanilla sauce "Recipe #23727". I had to leave out the raisins since we don't like them and subbed 2 eggs since I didn't have egg substitute. Thanks for posting! Made for Zaar Cookbook Tag.

I was really impressed with how good this was with so little fat in it! I used 1% milk, 1 egg plus 2 egg whites and omitted the raisins, but prepared as written otherwise. That worked out to be 4 WW points per serving. A far cry from what most bread puddings are! I felt it wasn't too wet or two dry, and I really liked the added flavor of the applesauce. I'll be making this again! Thanks!
