- 1 cup canola oil
- 1 1⁄2 cups Splenda Sugar Blend for Baking
- 4 eggs, slightly beaten
- 2 teaspoons banana extract
- 2 teaspoons lemon juice
- 2 cups mashed bananas (3 large bananas)
- 1⁄2 teaspoon salt
- 2 1⁄2 cups all-purpose flour
- 2 teaspoons baking soda
- 1⁄2 teaspoon baking powder
- 1⁄2 cup walnuts, chopped
directions
- Preheat oven to 350 degrees. Blend oil and sugar substitute together in a large bowl. Add banana extract,lemon juice and eggs; beat well.Stir in mashed bananas and set aside.
- Sift dry ingredients together and combine with banana mixture. Stir in chopped walnuts. Pour into a standard loaf pan coated with "Pam with flour" non-stick spray and bake for 50 minutes or until a toothpick inserted into the center comes out clean. Cool in pan. Cut into 16 pieces.
