Lemon Yogurt Loaf

"So delicious, this is fantastic to have with your morning coffee. You can also make it in two 5 1/4 x 3 1/4 -inch loaf pans, and cook for about 35 minutes instead of the 8x4-inch pan."

  • In bowl, whisk together flour, baking powder, baking soda and salt.
  • In large bowl, and using fingers, rub sugar with lemon rind. Whisk in yogurt and eggs; whisk in oil. Stir in flour mixture in 2 additions. Scrape into parchment paper-lined 8x4-inch loaf pan.
  • Bake in 350F oven until cake tester inserted in center comes out clean, 40-45 minutes.
  • Let cool in pan on rack for 5 minutes. Remove from pan; place on small tray.
  • SYRUP: In smalll bowl, whisk icing sugar with lemon juice until dissolved. Brush over top and sides of loaf, moving loaf around to absorb excess liquid. Let cool on rack.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
