Lemon Spinach Pasta

- 8 ounces egg noodles
- 2 tablespoons olive oil
- 1 lb spinach, fresh, stems removed
- 1⁄4 cup lemon juice, fresh
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon red pepper flakes
- 4 tablespoons parmesan cheese, grated
directions
- Boil pasta as directed on package. In the meantime, heat olive oil in large pan. Add spinach and cook until wilted (about 2 minutes) - stirring all the while. Add lemon juice, salt and red pepper flakes and stir again. Stir in noodles. Toss with Parmesan cheese and serve. (about 1 1/2 Celsius per serving).

I have been craving lemon so have been searching recipes to use up the bag of lemons I bought. This one is a winner with the rich color from spinach and salty flavor of parmesan. I enjoyed the quick pasta recipe after a day at work and sipped a bone dry rose' wine along with it which matches the tanginess of the fresh lemon juice.
