- 1 tablespoon oil
- 12 cups prepared turkey stock
- 1 onion
- 3 stalks celery
- 3 carrots
- 3 kale leaves
- 2 vine-ripened tomatoes
- 1 orange bell pepper
- 3 garlic cloves
- 1 tablespoon parsley
- 1 tablespoon Worcestershire sauce
- 398 ml tomato sauce
- 1 teaspoon Vegeta (optional)
- 1 teaspoon seasoning salt
- 2 teaspoons balsamic vinegar
- 2 cups cooked rice
- salt and pepper
- 4 cups diced cooked turkey
directions
- Using a food processor, finely chop the onion, celery, carrots, kale, tomatoes and orange pepper.
- Heat oil in large stew pot over medium-high heat.
- Sauté all veggies until soft, about 10 minutes.
- Add minced garlic and cook for 5 minutes, stirring frequently.
- Add Worchestershire and tomato sauce, cooking for an additional 5 minutes.
- Pour in the turkey stock, Vegeta if using and seasoning salt.
- Bring to a boil and then decrease temperature to simmer for 45 minutes. (At this point, you could use an immersion blender for picky eaters).
- Add the cooked rice, balsamic, turkey and heat through. .
- Salt and pepper to taste.
