ingredients
- 2 cups canned kidney beans
- 1⁄2 cup diced pickle (sweet or dill relish works well)
- 1 medium onion, chopped
- 3 eggs, hard-boiled and sliced
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄2 cup mayonnaise
directions
- Drain beans well.
- Mix together beans, pickles, onion, eggs and seasonings.
- Gently blend in the mayo.

This recipe really brought back memories of my Grandma's cooking! I loved this salad back then and it was so good when I made it now. I added just a splash of cider vinegar - personal preference. And the recipe makes just enough for a couple of meals for the two of us. DH really liked it and cleaned up the bowl!
