Kabab (Kebabs or Middle Eastern Skewers)

ingredients
- 1 kg ground beef
- 1 tablespoon parsley
- 1⁄2 teaspoon thyme
- 1⁄4 teaspoon ground cumin
- 1⁄2 teaspoon onion powder
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon paprika
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- skewer, presoaked, as needed
directions
- mix all ingredients in a food processor, pulse for a few seconds just enough to mix them. If you don't have a food processor, mix them well with your hands in a bowl.
- shape like jumbo hotdogs, not footlong just 3 inches long :P
- skewer them and grill each side until cooked; you can put 2 kebabs for each skewer then serve warm.

I live in Canada but this is a copy of a standard fare in a Persian/Afghani/Turkish restaurant or store. They make them like this at my local store in Montreal (my Afghani friend is the one making and spicing them and they are cooked by a Turkish guy). They are put on an eastern long flat bbq blade in the standard ripple around 1 foot long. Then they cook them on coal/wood open eastern bbq. (see on you tube for Persian/Afghani/Turkish cooking) Much better made and cooked and smoked that way. I buy them from the local grocery store that also has a cooking section in a pita sandwich for $4.99.

Wonderfully flavoursome: just loved the blend of flavours! I added about a teaspoon of lemon zest and used finely minced garlic (2 cloves) and one onion, also finely minced instead of the garlic and onion powder. I suppose I prefer to use real ingredients instead of powders wherever I can, and I figured that since the mixture was going to be processed that this would be fine, and it was. I did drain off some liquid - which I imagine came from the onion - after the mixture had been processed. We thoroughly enjoyed these with hummus and salad greens in pita bread. Thanks for sharing this super recipe!
