  • In a large bowl, beat butter and sugar until light and fluffy. Beat in eggs and vanilla.
  • Combine flour and baking powder and gradually add to the creamed mixture; mix well.
  • Drop by rounded teaspoonfuls onto ungreased baking sheets.
  • Bake at 350F for 9-11 minutes until the bottoms are lightly browned. Remove to wire racks to completely cool.
  • In a small bowl, combine powdered sugar, milk and vanilla. Mix until smooth.
  • Dip cookies into mixture allowing excess to drip off.
  • Roll in flaked coconut.

  1. Made for your 2nd Football Pool win, these cookies are an easy-fix, lightly sweet & buttery soft. My yield was as expected & a cook time of 11 min was ideal. We loved the cookies. What we were less fond of was the icing. Altho icing is sweet by its very nature, this was too sweet for us, the amt was excessive & the consistency seemed off. It did not work to dip the cookies or even spread the icing atop them. I added butter to the icing & then it spread easily. I saved the last cookie, tried a taste test w/a dusting of powd sugar & that was our pers pref. Congrats on your FP win & thx for sharing this recipe w/us.
     
  2. These are perfect cookie tray cookies. They are soft, not too sweet, and have just the right amount of coconut (easy to make too). These will be on my Christmas cookie tray from now on. I made my cookies small and needed much more coconut than called for. Thank you so much for sharing your recipe.
