  • Let cheeses come to room temperature.
  • Combine all ingredients except pecans. (A heavy duty mixer makes this really easy.).
  • Chill mixture in refrigerator for a couple of hours.
  • Roll into small individual balls.
  • Roll balls in pecans.
  • Refrigerate until serving time.
  • These may be made ahead and frozen.

  1. I made half a recipe and got about 36 individual cheese balls. I made them in advance, froze them and thawed in the refrigerator the day of the party. I liked the flavor of the cheese balls. They should be served with crackers. I thought the taste of the cream cheese was a bit much when eaten by themselves, without a cracker.

I'm a stay-at-home mom, school volunteer, church volunteer, etc., and I live in Middle Tennessee. My pet peeves are recipe instructions that leave out what to do with one of the ingredients, and people who won't put their shopping carts in the cart corrals! I have twin daughters who are in their second year of college and a son who is 16. My girls' college is close enough that I can come by every couple of weeks or so. When I tell them I'm coming, they ask Are you bearing baked goods?. Usually, I am, to the excitement of their suitemates!
