ingredients
- 2 cups milk
- 1⁄4 cup melted butter
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup firmly packed brown sugar
- 1⁄2 cup Bisquick
- 1⁄2 cup flaked coconut
directions
- Combine all ingredients except coconut in a blender and blend at high speed for 15 seconds.
- Pour into greased 10" pie plate.
- Sprinkle coconut on top (optional).
- Bake at 350° for 45 minutes or until knife inserted in center comes out clean.
- Cool completely before cutting.

Oh, gosh. This is WONDERFUL. I would definitely not recommend leaving out the coconut, as it's really what makes this dessert. I used some sweetened, shredded and toasted fresh coconut for the topping and mixed about a half of a cup of sweetened shredded store-bought coconut into the batter. Honestly, this is way too easy and way too scrumptious NOT to make again. Thanks so much!
