ingredients
- 2 cups diced cooked chicken
- 2 cups diced celery
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon grated onion
- 2 tablespoons fresh lemon juice
- 1 cup mayonnaise (I use Hellman's)
- 1⁄2 cup shredded cheddar cheese
- 2⁄3 cup crushed potato chips (I use Ruffles)
directions
- Mix all ingredients except cheese and potato chips.
- Pour into a shallow, buttered 2-quart casserole.
- Combine cheese and potato chips and spread on top.
- Bake uncovered 20 minutes at 350 degrees.

I can't tell you how happy I was to run upon this! This is a replica of a lost recipe of an old favorite (from High School Home Ec. Class)... To the best of my knowledge, the ingredients and proportions are just exactly the same as the lost recipe. Last night, I had my first opportunity to make this. The results were nothing short of wonderful wonderful, just as I remembered from the old days! It is the first time I have ever served this to my family, and everyone was very impressed! I love this recipe! It harks back to a time when people actually knew how to cook "from scratch". I get so tired of recipes that use only expensive convenience foods. We never keep potato chips in the house, so I used buttered dried crumbs (I make my own from homemade bread) and a four cheese Tex-Mex blend. It was delicious!! I thought the amount of mayo was just right (and I did use Hellman's). It wasn't too dry or too goopy. Simple, inexpensive and quite filling. Di, thank you for a wonderful recipe! It's a keeper!!
