- 2 cups cooked chicken, chopped
- 8 ounces water chestnuts, chopped
- 1 cup celery, chopped
- 1⁄2 cup sliced almonds, toasted
- 2 ounces pimientos, chopped
- 1 tablespoon onion, minced
- 1 cup mayonnaise
- 2 teaspoons lemon juice
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
- 8 ounces cheddar cheese, shredded
- 1 1⁄3 cups French fried onion rings
directions
- Preheat oven to 350 degrees.
- In a large bowl, add chicken, water chestnuts, celery, almonds, pimentos and onion.
- In a small bowl, mix mayonnaise, lemon juice, salt and pepper.
- Combine chicken and vegetables with the mayonnaise mixture and pour into a 2qt. baking dish.
- Sprinkle cheese and onion rings on top.
- Bake uncovered for 30 minutes.
- Serve hot.

I am new to cooking. But, I am finding that as long as you follow the recipe, it's actually not that hard. I enjoy making dishes that use fresh ingredients and not all of the processed box stuff I have been making for years. It surprises me how adventurous my daughter has become with trying new foods.
