Homemade Almond Paste

ingredients
- 1 cup blanched almond
- 1 cup confectioners' sugar
- 1 egg white
- 1 teaspoon almond extract
- 1 pinch salt
directions
- Process the almonds in a food processor until they start to clump together, about one minute.
- Add remaining ingredients and keep processing, stopping once or twice to push contents down if needed. About another minute.
- Place the paste on a board sprinkled with confectioner's sugar and form into a log shape.
- Wrap tightly in cellophane and store in refrigerator for a few hours. It is then ready for use.
- I have kept this paste for up to two weeks in the refrigerator.

I absolutely LOVE almond paste and I must confess that I have been known to buy it just to pick at it as a special treat. Where has this homemade version been all my life, I LOVE IT! I will be making this especially for Christmas where I can make those great Italian almond/pignoli cookies we all love so much. The best thing is the money that will be saved by making this version and I will never be buying it again. Thanks so very much for sharing this recipe with us Chef PotPie. Ten stars!!! The almond paste was so easy and quick to make! I blanched my own almonds, since I didn't want to run to the store and I always have a big bag of raw almonds on hand. I love that I can make this anytime I need it - as everything is a pantry ingredient! I also love that I know EXACTLY what is in it - and it is absolutely delicious (and fresh).
