Homemade Almond Paste

"I've been making my own almond paste for several years now, and this is the recipe I use. I think It's better than store-bought, and MUCH cheaper! Cook time is refrigeration time."

  • Process the almonds in a food processor until they start to clump together, about one minute.
  • Add remaining ingredients and keep processing, stopping once or twice to push contents down if needed. About another minute.
  • Place the paste on a board sprinkled with confectioner's sugar and form into a log shape.
  • Wrap tightly in cellophane and store in refrigerator for a few hours. It is then ready for use.
  • I have kept this paste for up to two weeks in the refrigerator.

  1. I absolutely LOVE almond paste and I must confess that I have been known to buy it just to pick at it as a special treat. Where has this homemade version been all my life, I LOVE IT! I will be making this especially for Christmas where I can make those great Italian almond/pignoli cookies we all love so much. The best thing is the money that will be saved by making this version and I will never be buying it again. Thanks so very much for sharing this recipe with us Chef PotPie.   2. Ten stars!!! The almond paste was so easy and quick to make! I blanched my own almonds, since I didn't want to run to the store and I always have a big bag of raw almonds on hand. I love that I can make this anytime I need it - as everything is a pantry ingredient! I also love that I know EXACTLY what is in it - and it is absolutely delicious (and fresh).
