  • Preheat oven to 400 degrees F.
  • Season chicken pieses generously on each side with Hidden Valley Ranch seasoning mix and 1 TBSP smoked paprika. Let chicken stand for 20 minutes after being seasoned. Meanwhile, roast tomato in oven until skin is charred, peel and dice.
  • Heat oil in large skillet, over medium high heat. Add chicken, without crowding, and brown well. Turn chicken and brown well. Add green pepper and shallots, and cook until soft. Add garlic and tomato, then cook 5 minutes while stirring. Add spinach, cook down, then add pepper sauce, reduce heat and simmer, covered, 30 minutes.
  • Transfer chicken stew to 9”, 2 QT casserole dish. Sprinkle with grated parmesan cheese. Bake until cheese is light brown on top.

  2. Tried this recipie out for a group of friends at a dinner party.It got rave reviews from our small group of amatuer food critics. It's not always easy finding something that pleases everybody but this dish seemed to do it. What I really liked is it is an inexpensive, easy to prepare meal that has a unique delicious flavor. Always a good thing coming from an amatuer cook trying to prepare something different than the regular spagetti and meat sauce. Overall a great recipe I would recommend to everybody.
     
  3. I loved the spice combination of the Hidden Valley Ranch Seasoning Mix and smoked paprika! This could be a whole new flavor for Hidden Valley Ranch! I halved the recipe to make it for just my husband and I. It was easy and very good tasting. I used a pan that would go from stovetop to oven, so just added the cheese at the end and into the oven it went. This dish is so soulful and satisfying that it really does not need any side dish. I do not normally roast tomatoes, but tried it and it was easy. I think you could also get away with using canned diced tomatoes if you did not have fresh tomatoes on hand. I give it an excellent rating! Try it and you will too!

Also, the added spice is just right, blends well with the layer of flavors, and makes this recipe stand out from other Hidden Valley Ranch chicken recipes I've tried. I will definitely make this again--highly recommend!
