Hg's Snazzy Southwestern Breakfast Tostada

"This is from a Hungry Girl email that I received this morning. The email was all about Egg Beaters."

• Serves: 1

ingredients

• 1⁄2 cup egg beaters southwestern egg substitute, with yolk
• 1 small high-fiber flour tortilla
• 1 ounce fat-free cheddar cheese, shredded
• 1 tablespoon salsa
• 1 tablespoon nonfat sour cream

directions

1. Bring a small pan sprayed with nonstick spray to medium heat. Pour in Egg Beaters and scramble while you cook.
2. Once cooked, top with cheese, reduce heat and cover. Cook for 1 minute longer to melt the cheese.
3. Meanwhile, toast tortilla until crispy. Top tortilla with cheesy scramble. Finish it off with salsa and sour cream. Enjoy! :-).
