Herb Crusted Chicken Bites

- 1 teaspoon dried herbs
- 2 cups fresh whole wheat breadcrumbs
- salt and black pepper
- flour, for dusting
- 2 eggs, lightly beaten
- 3 chicken breasts, trimmed and cut into 3cm cubes
- lemon wedge, to serve
directions
- Preheat oven to 210°C Place the mixed herbs, breadcrumbs, salt and pepper in a large bowl and mix until combined, then set aside. Place the flour in another bowl and the eggs in a third bowl. Toss the chicken cubes in the flour, dusting off any excess. Working in batches, dip the chicken pieces into the egg, then the breadcrumbs, pressing to coat well.
- Once all the chicken is crumbed, heat a little oil in a large non-stick frying pan. Cook the chicken in batches until golden. Remove and transfer to a baking tray lined with baking paper. Place in oven for 4-5 minutes or until chicken is cooked through. Serve chicken with lemon wedges and a little whole egg mayonnaise for dipping, if desired.

O'kay I was originally only going to give this 4 stars after making but it got such rave reviews from some very picky diners it had to be 5 stars. My problems I had already increased the fresh bread crumbs (wholemeal/wholegrain bread) as I was making for 6 and my 3 breasts had a weight of 1 kilo (2.2 lbs) and I got 50 nuggets out of that but it took 28 slices of bread in the food processor to cover them and only just. I served with mashed potato and steamed veg and enough nuggets left over to feed another 2 people easily (should be great in sandwiches). But to be honest I would like to try this recipe again but try the easy path and use panko crumbs flavoured with the dry herbs which I think would be a little less time consuming. This was just excellent. Loved the fresh whole wheat breadcrumbs. Came out so crisp and the chicken was nice and moist. I used Italian seasoning and added about 1/2 tsp each of onion powder and garlic powder. This would be very good on top of a salad. After browning in the skillet I cooked in the oven at 350 for 30 minutes. Perfect. Served with Ranch Dressing and some honey for me. Made for I Recommend Tag Game. :)

I ended up cutting the chicken into strips rather than bites because I was running late, but they came out just fine. For the herbs I used oregano and thyme and a little chile powder. Also, I used 3 egg whites instead of the 2 eggs. Served them with a roasted tomato salsa and a salad.Very good! Made for Bevy Tag.
