Herb and Cheese Breaded Chicken Breast

- 4 boneless skinless chicken breasts
- 1⁄2 cup olive oil
- 1 garlic clove, pressed
- 12 saltine crackers, finely crushed
- 1 teaspoon pepper
- 1 teaspoon italian seasoning
- 1⁄3 cup parmesan cheese, finely shredded
- 1⁄3 cup monterey jack cheese or 1/3 cup colby-monterey jack cheese, finely shredded
- 1 teaspoon rosemary, crushed
directions
- Blend olive oil and garlic in a medium sized bowl. Let sit while you prepare the breading mixture.
- Combine crushed saltines, pepper, Italian Seasoning and Rosemary in a separate medium sized bowl until blended.
- To the dry mixture, add both cheeses and mix well.
- One chicken breast at a time, dip in oil and then coat in breading mixture. Place breaded chicken breasts in a greased baking dish.
- Sprinkle any remaining breading mixture evenly over the top of the chicken, and then drizzle any remaining oil over the top of that.
- Bake at 400°F for 25 - 35 minutes, depending on thickness of chicken breasts.

This was very yummy! I cut it in half for my husband and I. We both loved it. So much healthier to use olive oil than an egg for breading it! What a great idea! Also, the garlic in it was the perfect amount for great flavor! I used Triscuit crackers because I didn't have Saltine's. They were rosemary & olive oil flavor so I think it made it even better! I added other Italian seasonings too (basil, oregano, thyme, etc.) I served it with whole wheat angel hair pasta with a chunky tomato sauce with mushrooms and zucchini! Thanks for a wonderful and SIMPLE recipe! I've never been able to make breaded chicken so good & so easily! I'll be making this great recipe often!

This was pretty good. It was easy to make. I used monterey jack cheese with the parmesan cheese. It was a good combination. I didn't have Italian Seasoning so I used pinches of Oregano, basil and thyme leaves. I had this with Recipe #239940 and my Recipe #240456. It was a good combination of foods.
