Roasted Chicken Breast

"I heard on the Food Network station that roasting left the chicken with more flavor then boiling or cooking in the crockpot. So I thought I'd try it but found no roasting recipes here. So this one came form Cook.com"

  • Place chicken breasts in a shallow baking dish, skin side up.
  • Sprinkle each breast with salt, pepper and 1/2 teaspoon thyme.
  • Brush with melted butter and roast 1 hour at 350 degrees or until done.

  2. This is very good and easy. I do recommend checking the chicken with an instant read thermometer before an hour is up as I had two slightly different size pieces and one was about 8-10 degrees more done than the other after an hour (and should have been taken out about 10 minutes earlier, I think). I salted liberally and the skin got very crispy (don't know if those are related or not but it sure made the skin tasty!) I liked this method and will use it again, for sure. Thanks for sharing!
     
  3. This is a good method for chicken on bones with skin - which I personally think is the best. It was a simple and quick preparation. The chicken was nice and moist and thoroughly cooked per my instant read thermometer. For my taste, the chicken flavor in this recipe was bland, but then I usually like stronger tastes. Next time I use this method I will probably use a stronger herbed butter mix instead (perhaps some fresh chopped thyme, rosemary, a squeeze of fresh lemon juice and some salt and pepper) and baked on top of fresh sliced shallots.
