ingredients
- 2 1⁄2 cups lentils
- 1 meaty ham bone or 1 hock
- 4 large sausage
- 2 cups chopped onions
- 1 cup chopped celery
- 2 large carrots, chopped
- 2 cloves garlic, chopped
- 2 (16 ounce) cans stewed tomatoes, crushed
- 2 bay leaves
- 1 tablespoon fresh thyme, less if dried
- 1⁄2 teaspoon black pepper
- 1⁄2 cup parsley
- 2 tablespoons cider vinegar
- salt, if needed
- 10 cups water
directions
- Put all the ingredients into a large soup pot make sure you cut up the sausage.
- Bring it to a full boil and then let it simmer for about 4 hours or until meat is tender and falls off the bone.
