ingredients
- 2 cups shreds wheat bran (like kellogs all-bran)
- 1 3⁄4 cups milk
- 1 1⁄2 cups all-purpose flour
- 3⁄4 cup sugar
- 1 tablespoon baking powder
- 1⁄4 teaspoon salt
- 1 medium ripe banana, mashed
- 1⁄2 cup crunchy peanut butter
- 1⁄4 cup vegetable oil
- 1 large egg

Topping
- 1⁄2 cup all-purpose flour
- 1⁄2 cup firmly packed light brown sugar
- 1⁄4 cup butter or 1/4 cup margarine
- 2 tablespoons peanut butter
directions
- Stir together cereal and milk; let stand 5 minutes.
- Combine flour and next 3 ingredients in a large bowl;make a well in center of mixture Stir banana and next 3 ingredients into cereal mixture; add to dry ingredients, stirring just until moistened.
- Spoon into greased muffin pans, filling two-thirds full.
- Sprinkle streusel topping evenly over batter.
- Bake at 350 for 25-30 minutes.
- Remove from pans immediately, and cool on wire racks Topping: Combine flour and brown sugar.
- Cut butter and peanut butter into flour mixture with a pastry blender or fork until mixture resembles small peas.

Loved these! They are very filling and pretty good for you. I used natural peanut butter - next time I am going to try 1/2 wheat flour & splenda to make them a bit healthier. I put the soaked bran in the food processor, with the PB and banana and other wet ingredients, worked great - nice texture. I also used the suggestion of a sprinkle of mini choc chips on top instead of the topping, and it was perfect. I froze some, and they tasted the same after thawing. FYI They were much better after sitting overnight, I wasn't too thrilled at first, but the next day they were great. I used Kelloggs All Bran.

These are wonderful! I used raisin bran and took out the raisins. I put the liquid ingredients including the banana and peanut butter in the blender. I was worried about the bran flakes having a texture that my kids would not eat. They turned out very light like a cake. I made some in the microwave and some in the oven. They both turned out great. These are good with mini chocolate chips on top, warmed with a glass of milk. I didn't use the topping, they don't really need it. My 5 year old says its great! Thanks!

I am a teacher, and have been married to my high school sweetheart for almost 9 years. I have a niece who is 7, and a nephew who is 1. Also, I have 2 sweet kitties. Sinatra is a bit on the plump side, and Audrey is a petite dainty thing. They both are almost mirror images of each other.
