ingredients
- 2 cinnamon sticks, broken into 4 pieces each
- 4 teaspoons cumin seeds
- 4 teaspoons coriander seeds
- 2 teaspoons dried chilies
- 1 teaspoon allspice
directions
- Heat a nonstick frying pan to medium heat (do NOT add oil) and add your spices.
- Stir constantly until the aroma intensifies. Depending on how hot your pan is this could take a few minutes - just don't let them burn.
- Add to spice grinder/coffee grinder and grind to a fine powder.
- Store in an airtight container.

I'm from Jackson, MS, but I've lived here and there...from Ireland to Minnesota. I just graduated with bachelor's degrees in linguistics and psychology, and I'm currently in a TESL masters program...but I'm not sure if I'll stick with that. I WAS a vegetarian, but now I will eat meat. I'm much more concerned with where the food came from...is it ethical? did it travel 32543 miles to get to my plate? etc...?
