- 2 lbs potatoes, cooked and cubed (5 big or 8 small potatoes)
- 1 green pepper, chopped
- 1 sweet onion, chopped
- 3 stalks celery, chopped
- 2 (16 ounce) cans beans (white, black or chick peas)
- 1⁄3 cup olive oil (or to taste)
- 1⁄4 cup apple cider vinegar (or to taste)
- 1⁄4 cup red wine vinegar (or to taste)
- 1⁄2 cup fresh basil, chopped
- 3⁄4 cup sun-dried tomato, diced
- 1 tablespoon lemon juice
- 2 teaspoons honey
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt and pepper
directions
- Combine all ingredients and enjoy! If it lacks flavor just boost whatever seasonings you want. I might have thrown in a teaspoon of miso paste, I can't remember. That adds a little almost cheddary flavor that I like.

Pretty much followed the recipe, & although it didn't state one way or the other, I didn't peel the potatoes as we like the flavor of the peel! I also used black beans here since I'd made a bean dish using other kinds! It was shared in a potluck we attended & received rave reviews for most of those who tasted it, & since none was left at the end of it all . . . Many thanks for sharing the recipe!
