Ham Relish for Tea Sandwiches

ingredients
- 1⁄3 cup golden raisin
- 1⁄2 lb baked ham, cut into 1 inch cubes or 1/4 inch thick slices
- 2 tablespoons cream cheese, softened
- 2 tablespoons good mayonnaise (Duke's or Hellman's)
- 1 teaspoon olive oil
- 1 teaspoon white wine vinegar
- 3 tablespoons chochow relish
- 1⁄4 teaspoon curry powder
directions
- Soak the raisins in warm water for 10 minutes and then chop in food processor until no raisins remain whole. Add the ham and continue processing for 1 minute longer, until mixture is smooth and no ham pieces are left whole.
- Place mixture in a mixing bowl and add the remaining ingredients. Will keep in the refrigerator for up to 3 days.

Although this was tasty I felt it seemed to be missing that final something. The cream cheese does add creaminess and smoothness to the spread. Next time I will play with increasing the curry powder or adding more seasonings. I left the ham slightly chunky due to personal preferences and served on multigrain sourdough buns with lettuce leaves, sliced tomatoes, and onions. Thank you for sharing the recipe! =)
