  • Heat oven to 350°F.
  • Warm the milk and set aside.
  • Cream up the butter with sugar, add eggs then mix with the flour. Add some yeast & a pinch of salt.
  • Make a depression in the dough and pour in the warm milk. Add the rest of the yeast and fruit, mixing & kneading the dough.
  • Leave to rise in a warm room for two hours. Knead again and grease a cake tin. Tip in the gache and cook for one hour in a moderate oven until golden brown.

  1. I tried this recipe after having gauche in Guernsey, well what a waste of ingredients. I followed the recipe to a T, the ingredients must be wrong especially with 750g of flour. The mixture would not bind together but I persevered. It did not rise as it was too heavy a mixture and did not cook through properly (if at all) and it weighed like a house brick. This really is a recipe for disaster. What a shame whoever put this on the internet hadn't tried to cook it first.
