  • Preheat oven to 325 degrees.
  • Spray muffin tin with nonstick spray.
  • In medium mixing bowl, mash avocado well.
  • Stir in yogurt, coconut oil, coconut milk, and vanilla until well blended. Set aside.
  • In large mixing bowl, stir together flour, sugar, cocoa powder, salt and baking soda until well blended.
  • Stir avocado mixture into dry mixture, stirring until well blended.
  • Add dark chocolate chips and semisweet chocolate chips, stirring until blended.
  • Fill muffing cups a scant 2/3 cup full. Top with reserved chocolate chips.
  • Bake for 24 minutes, or until toothpick inserted in center comes out clean. Do not overbake.

  1. I have played with this recipe and found that the larger the avocado, the better.....and in some stoves, 20 minutes baking time is enough.
