Ground Turkey Enchiladas

- 1 1⁄2 lbs ground turkey
- 14 ounces frozen spinach, thawed and drained
- 2 cups salsa
- 14 ounces diced tomatoes
- 10 flour tortillas
- 2 cups Mexican blend cheese
- 1 (8 ounce) package cream cheese
- ground cumin
directions
- Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.
- Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.
- Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.
- Serve with refried beans and Mexican rice. Sour cream and guacamole are also great additions.

I found this recipe on Cooks.com and it was submitted by: Marie Walling and was happy to see it was posted here. I made this tonight because of the uniqueness of the ingredients i.e no traditional canned enchilada sauce and the addition of the spinach and cumin. I only used 1/4 of the spinach as my kids and hubby don't care for spinach that much of it. The rest was followed exactly. My husband and I really enjoyed this. Smooth creamy flavor inside and out and then a bit of crisp on the sides of the tortillas where they were rolled. A very satisfying and hearty meal. Thanks Miss Oregon for posting so I didn't have to. This one is a keeper. Enjoy! ChefDLH
