Yummy! It could be spicier than the spicy option, but this pulled together very nicely and tasted great. And it didn't have the cabbage-y smell, even left over, to dissuade anyone else. Almost every recipe I find online, I need to double the veggies (or halve the meat) at least once to get it the way I like it, but not this one!

I was wary of the recipe but needed to use my ground beef and had all the ingredients for this. I used jalapenos instead of green pepper but just 2. Gave it a nice kick but not too much. Didn't have thyme. Husband loved it. Oh and I used a full pound of ground beef..why not? I needed about twice the liquid it called for if not more...to cook the potatoes...then I let it cook out with the lid off. Will add this to rotation..easy, filling, and healthy!

I made this in the crockpot (after browning meat and onions separately) - took a bit over 4 hours on high. I used beef broth and substituted sweet italian sausage and fennel instead of beef and thyme. Left out green beans. The red-meat eater in my house said "this tastes great, I can't believe it's good for you too!" ;)
