  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Sift together the flour, baking powder and salt, set aside.
  • In a medium bowl, cream together the sugar and butter.
  • Beat in the eggs one at a time, then stir in the lime zest, nutmeg, cinnamon and allspice.
  • Add the dry ingredients alternately with the milk, stirring after each addition.
  • Pour batter into the prepared pan.
  • Bake for 75 to 90 minutes in the preheated oven, until a toothpick inserted comes out clean.
  • Cool in the pan for 10 minutes before turning out onto a rack to cool completely.

  1. This is a very nice cake and I made it as listed but doubled the cinnamon and allspice and added the juice of the lime used for zesting. I would definitely change the directions to not say chilled butter because that is hard to cream, but say instead room temperature butter. Also, I think next time I'd add some coconut flake to the mix to give it more texture or maybe some nuts. I made this for ZWT for the Epicurean Queens.
     
  2. This is pleasant, light cake with a tender, moist crumb, but we all felt it was missing something--maybe some fruit. The directions are somewhat confusing. The ingredient list calls for cold butter, but the directions call for the butter to be creamed. Ordinarily, butter that is to be creamed would be at room temperature, as cold butter is much harder to cream. I used an 8"x8" pan and baked for 60 minutes. Made for ZWT 5 Caribbean dessert challenge.

  4. What a wonderful cake, with such lovely subtle flavours and a beautiful crumb! I will definately make this one again, or I will be in trouble - my friends liked it that much! I doubled the cinnamon, added a slight bit more allspice, and used coconut milk instead of regular milk. I did also squeeze in about a teaspoon of the lime's juice. Excellent, excellent - thanks, cookin_nurse! Made for ZWT5.
     
  5. I really liked this gentle flavored cake...I baked it in a bundt pan and REDUCED the baking time to 45-50 minutes. It's a keeper recipe.
