Green Beans-Canning-Raw Pack

Ready In:
4 quart




  • Wash beans.
  • Drain.
  • Remove strings and trim ends.
  • Cut into 2 inch pieces.
  • Pack beans into a hot quart jar leaving 1 inch head space.
  • Add Salt.
  • Ladle boiling water over beans-again leaving 1 inch head space.
  • Wipe rims and adjust 2 piece caps.
  • Process quarts for 25 minutes at 10 pounds pressure.
  • **Shouldyou wish to use pints use 1/2 t salt and process 20 minutes at 10 pounds pressure.

  1. I hsve been canning green beans for several years now in a pressure canner. Tonight i had 4 jar lids buckle up on me and dont know why. Any ideas?
  2. How much water in the canner? I have a power pressure cooker
  3. What is the difference between packing raw and cooking for 5 minutes ? Seems like the cooking first would make them soggy.
  4. Is the salt optional ?
  5. Im not using a pressure cooker so what is the correct time for this method. Using canning pan.

  2. This is the way I can green beans very year, for years. You have to use a pressure cooker like it says to can green beans. I also run the blade of a knife down the side of the jar to make sure that there is no air bubbles. Thank you for posting so that others will know.
  3. This will be the first time doing beans this way. I have a new pressure cooker but not sure how to pressure at 10 pounds. I do not have a gauge like the old style pressure cookers.
  4. Did these last year and, on looking up the recipe again for this year's crop, saw that I hadn't reviewed it. Apologies! A perfect way to preserve beans - they aren't over-cooked, and retain that 'fresh' taste! Thanks for a great recipe!
  5. Made these last year...super. Quick, easy and yummy. Just used up my last jar. Great in hamburger bean soup. I will be planting more beans this spring for these...and to think, I used to hate green beans. Far better than canned from the store.
