  • Bring 3/4 cup water to boil; add quinoa, cover, and reduce heat to low. Cook until liquid is absorbed, 12-14 minutes.
  • In processor, pulse carrot, half the scallions, beans, quinoa, crumbs, egg & spices.
  • Form into patties and cook until browned.
  • Combine remaining ingredients and serve on pita.
